Avocado Egg Toast with Cottage Cheese

Ingredients
• 2 slices bread
• 2 eggs
• ½ avocado
• 2–3 tablespoons cottage cheese
• 1–2 tablespoons green onion, sliced
• Salt
• Black pepper
• Water (for boiling eggs)
Instructions
Cook the eggs.
Place eggs in a small pot and cover with water (about 1 inch above).
Bring to a boil over medium-high heat.
Once boiling, reduce to a gentle boil and cook:
• 9 minutes → slightly soft
• 11 minutes → medium
• 12–14 minutes → fully firm
Transfer to cold water for 5 minutes, then peel.Toast the bread.
Toast until golden and crisp.
This helps hold the topping without getting soggy.Add everything to a cutting board.
Place peeled eggs, avocado, cottage cheese, and green onion on the board.Chop and mix.
Use a knife to chop everything into small pieces.
Then mash lightly with the knife or a fork until combined.
Texture should be slightly chunky but spreadable.Season.
Add salt and black pepper.
Mix one more time.Assemble.
Spoon the mixture onto the toast and spread evenly.Serve.
Eat right away while the toast is still crisp.
