Chocolate-Covered Stuffed Dates (Almond & Peanut Butter)

Ingredients:
10–12 Medjool dates (pitted)
½ cup almond butter or peanut butter
½ cup dark chocolate, melted
¼ cup chopped almonds (for almond version) or chopped peanuts (for peanut version)
Sea salt, to taste
Instructions:
Slice each date open lengthwise, but don’t cut all the way through. Remove the pit if needed.
Fill each date with almond butter or peanut butter.
Sprinkle chopped almonds or chopped peanuts on top of the nut butter.
Dip the stuffed dates into the melted dark chocolate or drizzle chocolate over the top.
Sprinkle with sea salt if desired.
Place the stuffed dates on a parchment-lined tray or plate.
Chill in the fridge for 10–15 minutes until the chocolate hardens.
Tips:
You can store these in the fridge in an airtight container for up to 1 week.
For a crunchy twist, add cacao nibs or granola inside with the nut butter.
Use high-quality dark chocolate for the best taste.
