Ingredients
• 2–4 lb chuck roast
Not Counted (but used):
• 1–2 teaspoons salt
• 1 teaspoon black pepper
Optional Add-Ins
• Garlic cloves
• Onion
• Fresh rosemary or thyme
• Bone broth or beef broth
• Paprika or garlic powder
Instructions
Preheat the oven.
Heat oven to 300°F (150°C).Prepare the roast.
Pat the chuck roast dry with paper towels.
This helps the seasoning stick better and improves browning.Season the meat.
Season all sides with salt and black pepper.
Keep it simple or add extra spices if you want more flavor.Place in a baking dish or Dutch oven.
Put the roast in a covered baking dish, roasting pan, or Dutch oven.
If using garlic, onions, broth, or herbs, place them around the meat.Cover tightly.
Cover with a lid or tightly with foil.
This traps moisture and keeps the beef tender while it cooks slowly.Roast slowly.
Bake for:
• 2–2½ hours for smaller roasts
• Closer to 3 hours for larger roastsThe roast is ready when:
• A fork goes in easily
• The meat pulls apart easilyOptional: broil for color.
If you want a crispier top or more color:
• Remove the cover
• Turn oven to broil
• Broil 2–5 minutesWatch closely so it doesn’t burn.
Rest and serve.
Let rest a few minutes before shredding or slicing.
Tips
• Chuck roast becomes more tender the longer it cooks.
• If it still feels tough, it usually needs more time.
