Ground Beef Zucchini Bowl

Ingredients:

  • 1 lb ground beef (85% lean)

  • 1 zucchini, diced

  • 1 small onion, diced

  • 2 green onions, chopped

  • Tacos Seasoning or Spices of choice (e.g., garlic powder, paprika, cumin, chili flakes, or Italian seasoning)

  • Olive oil (for cooking)

  • Salt & pepper

Instructions:

  1. Heat a skillet over medium heat and add a small amount of olive oil.

  2. Add diced onion and cook for 2–3 minutes until softened.

  3. Add ground beef and break it up with a spatula. Cook until browned, about 5–7 minutes.

  4. Stir in diced zucchini and your chosen spices. Cook for another 5–6 minutes until zucchini is tender.

  5. Taste and adjust seasoning. Top with chopped green onions and serve.

Tips:

  • Great served as-is or over rice, cauliflower rice, or quinoa.

  • Add a dollop of Greek yogurt, avocado, or shredded cheese if desired.

  • Store leftovers in the fridge for up to 4 days.
