Ingredients:
17-22 small raw shrimp, peeled and deveined (about 170g)
½ tbsp fajita or taco seasoning
½ cup uncooked rice
1 cup water
½ cup grilled corn
¼ cup guacamole
½ tbsp extra virgin olive oil
Optional Ingredients:
2 tbsp crumbled feta cheese
¼ cup warmed black beans
Dressing of your choice
Salt & pepper, to taste
Instructions:
Cook the Rice:
Rinse ½ cup rice under cold water until the water runs clear.
In a small pot, bring 1 cup water to a boil over medium-high heat.
Add the rinsed rice and a pinch of salt.
Reduce heat to low, cover, and let simmer for 12-15 minutes (or according to package instructions).
Remove from heat and let sit covered for 5 minutes.
Fluff with a fork and keep warm.
Cook the Shrimp:
Heat ½ tbsp olive oil in a skillet over medium-high heat.
Add shrimp and sprinkle with fajita or taco seasoning.
Cook for 2-3 minutes per side until pink and fully cooked.
Season with salt and pepper to taste.
Assemble Bowls:
Divide cooked rice evenly into two bowls.
Add Toppings:
Top each bowl with cooked shrimp, grilled corn, and guacamole.
Optional Extras:
Add feta cheese, black beans, and dressing if desired.
