Ingredients:

  • 17-22 small raw shrimp, peeled and deveined (about 170g)

  • ½ tbsp fajita or taco seasoning

  • ½ cup uncooked rice

  • 1 cup water

  • ½ cup grilled corn

  • ¼ cup guacamole

  • ½ tbsp extra virgin olive oil

Optional Ingredients:

  • 2 tbsp crumbled feta cheese

  • ¼ cup warmed black beans

  • Dressing of your choice

  • Salt & pepper, to taste

Instructions:

  1. Cook the Rice:

    • Rinse ½ cup rice under cold water until the water runs clear.

    • In a small pot, bring 1 cup water to a boil over medium-high heat.

    • Add the rinsed rice and a pinch of salt.

    • Reduce heat to low, cover, and let simmer for 12-15 minutes (or according to package instructions).

    • Remove from heat and let sit covered for 5 minutes.

    • Fluff with a fork and keep warm.

  2. Cook the Shrimp:

    • Heat ½ tbsp olive oil in a skillet over medium-high heat.

    • Add shrimp and sprinkle with fajita or taco seasoning.

    • Cook for 2-3 minutes per side until pink and fully cooked.

    • Season with salt and pepper to taste.

  3. Assemble Bowls:

    • Divide cooked rice evenly into two bowls.

  4. Add Toppings:

    • Top each bowl with cooked shrimp, grilled corn, and guacamole.

  5. Optional Extras:

    • Add feta cheese, black beans, and dressing if desired.

  6. Serve:

    • Enjoy immediately.
