Smoked Salmon Cucumber Bites

Ingredients:

  • 1 large cucumber, thinly sliced lengthwise (about 8 strips)

  • 4 oz smoked salmon, thinly sliced (cut into 8 portions)

  • 1/4 cup cream cheese (softened)

  • 1 tbsp sesame seeds

  • Salt & pepper (to taste)

Instructions:

  1. Prepare the Cucumber: Using a vegetable peeler or mandoline, slice the cucumber lengthwise into thin strips. Pat dry with a paper towel to remove excess moisture.

  2. Arrange the Strips: Lay all cucumber strips flat, slightly overlapping, on a clean surface or cutting board.

  3. Spread Cream Cheese: Evenly spread a thin layer of softened cream cheese over the cucumber strips.

  4. Add the Salmon: Place the smoked salmon on top of the cream cheese, covering the entire surface.

  5. Roll it Up: Starting from one end, tightly roll the cucumber and salmon into a spiral, keeping it as compact as possible.

  6. Garnish & Serve: Sprinkle sesame seeds over the roll and season with salt and pepper. Slice if desired and serve immediately.

  • Flavored Cheese: Try using flavored cream cheese like chive, garlic herb, or dill.
