Smoked Salmon Cucumber Bites

Ingredients:
1 large cucumber, thinly sliced lengthwise (about 8 strips)
4 oz smoked salmon, thinly sliced (cut into 8 portions)
1/4 cup cream cheese (softened)
1 tbsp sesame seeds
Salt & pepper (to taste)
Instructions:
Prepare the Cucumber: Using a vegetable peeler or mandoline, slice the cucumber lengthwise into thin strips. Pat dry with a paper towel to remove excess moisture.
Arrange the Strips: Lay all cucumber strips flat, slightly overlapping, on a clean surface or cutting board.
Spread Cream Cheese: Evenly spread a thin layer of softened cream cheese over the cucumber strips.
Add the Salmon: Place the smoked salmon on top of the cream cheese, covering the entire surface.
Roll it Up: Starting from one end, tightly roll the cucumber and salmon into a spiral, keeping it as compact as possible.
Garnish & Serve: Sprinkle sesame seeds over the roll and season with salt and pepper. Slice if desired and serve immediately.
