Base Ingredients (5)
2 lbs (900 g) ground beef (85–90% lean)
2 eggs
1 cup pork rinds, finely crushed
½ cup grated parmesan cheese
1 small onion, grated (with juices)
Plus salt & pepper
Optional Add-Ins
1 tsp garlic powder or 3 cloves garlic, minced
1 tsp onion powder
1 tsp dried oregano or Italian seasoning
½ cup shredded mozzarella cheese
½ tsp red pepper flakes (for heat)
Fresh parsley or basil for garnish
Instructions
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
In a large bowl, whisk eggs, then mix in pork rinds, parmesan, onion, and any optional add-ins.
Add ground beef and gently combine until just mixed.
Roll into 1½-inch meatballs and place on the baking sheet.
Bake for 20–24 minutes, or until fully cooked (internal temp 160°F / 71°C).
Optional: Broil for 1–2 minutes for a golden, crispy finish.
