Base Ingredients (5)
2 lbs (900 g) ground turkey
2 eggs
1 cup pork rinds, finely crushed
½ cup grated parmesan cheese
1 small onion, grated (with juices)
1 tbsp olive oil (for moisture)
½ tsp black pepper
Extra salt to taste
Optional Add-Ins
½ cup shredded mozzarella cheese (extra tenderness + richness)
3 cloves garlic, minced (flavor boost)
2 tbsp fresh parsley, chopped (or 1 tsp dried)
1 tsp dried oregano
½ tsp red pepper flakes (for heat)
Instructions
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a large bowl, whisk the eggs, then add pork rinds, parmesan, onion, and any optional add-ins you’re using. Mix well.
Add the ground turkey and gently combine until just mixed — don’t overwork.
Roll into 1½-inch meatballs and place on the baking sheet.
Bake 18–20 minutes, or until internal temp reaches 165°F (74°C).
Optional: Broil 1–2 minutes for a golden, crispy top.
