Base Ingredients (5)

  • 2 lbs (900 g) ground turkey

  • 2 eggs

  • 1 cup pork rinds, finely crushed

  • ½ cup grated parmesan cheese

  • 1 small onion, grated (with juices)

  • 1 tbsp olive oil (for moisture)

  • ½ tsp black pepper

  • Extra salt to taste

Optional Add-Ins

  • ½ cup shredded mozzarella cheese (extra tenderness + richness)

  • 3 cloves garlic, minced (flavor boost)

  • 2 tbsp fresh parsley, chopped (or 1 tsp dried)

  • 1 tsp dried oregano

  • ½ tsp red pepper flakes (for heat)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

  2. In a large bowl, whisk the eggs, then add pork rinds, parmesan, onion, and any optional add-ins you’re using. Mix well.

  3. Add the ground turkey and gently combine until just mixed — don’t overwork.

  4. Roll into 1½-inch meatballs and place on the baking sheet.

  5. Bake 18–20 minutes, or until internal temp reaches 165°F (74°C).

  6. Optional: Broil 1–2 minutes for a golden, crispy top.
