Ingredients:
4 oz ground beef
½ cup cottage cheese
1 teaspoon honey
1 small sweet potato (about 100g)
¼ avocado
Olive oil, salt, and pepper to taste
Optional: Taco seasoning for the beef
Instructions:
Preheat oven to 425°F (220°C).
Peel and dice the sweet potato into small cubes (about ½ inch pieces) for even cooking.
Toss the sweet potato cubes in a bowl with a drizzle of olive oil, salt, and pepper.
Spread them out on a baking sheet and roast for 20–25 minutes, flipping halfway, until golden and tender.
While the sweet potatoes are cooking, heat a skillet over medium heat.
Add the ground beef and cook for 6–8 minutes, breaking it apart with a spatula, until fully browned and cooked through.
Season the beef with salt and pepper, or taco seasoning if you prefer.
Slice the avocado into thin pieces.
Once everything is cooked, assemble your bowl: add the roasted sweet potatoes, cooked beef, and cottage cheese.
Top with sliced avocado and drizzle with honey. Add a little extra salt and pepper if needed.
Tips:
Full-fat cottage cheese makes this bowl extra creamy and satisfying.
For a spicier twist, top with chili flakes or hot sauce.
