Chocolate-Covered Chickpea Truffles

Ingredients:
1 can (15 oz) chickpeas, drained and rinsed
½ cup almond butter
1 cup melted chocolate chips + 1 tsp coconut oil (for base)
1 cup melted chocolate chips + 1 tsp coconut oil (for coating)
Sea salt, for topping
Instructions:
Blend: In a food processor or blender, blend chickpeas, almond butter, and the first portion of melted chocolate (1 cup with coconut oil) until smooth.
Scoop & Freeze: Scoop the mixture onto a parchment-lined tray (use a spoon or cookie scoop). Freeze for 10 minutes to firm up.
Roll: Once chilled, roll each scoop into a smooth ball. Freeze again for 20 minutes.
Coat in Chocolate: Dip each ball into the second batch of melted chocolate. Tap off excess and place back on parchment.
Top & Chill: Sprinkle with flaky sea salt. Chill in the fridge or freezer until the coating is firm.
Tips:
Store in the fridge for a soft center, or freezer for a firmer bite.
