Chocolate-Covered Chickpea Truffles

Ingredients:

  • 1 can (15 oz) chickpeas, drained and rinsed

  • ½ cup almond butter

  • 1 cup melted chocolate chips + 1 tsp coconut oil (for base)

  • 1 cup melted chocolate chips + 1 tsp coconut oil (for coating)

  • Sea salt, for topping

Instructions:

  1. Blend: In a food processor or blender, blend chickpeas, almond butter, and the first portion of melted chocolate (1 cup with coconut oil) until smooth.

  2. Scoop & Freeze: Scoop the mixture onto a parchment-lined tray (use a spoon or cookie scoop). Freeze for 10 minutes to firm up.

  3. Roll: Once chilled, roll each scoop into a smooth ball. Freeze again for 20 minutes.

  4. Coat in Chocolate: Dip each ball into the second batch of melted chocolate. Tap off excess and place back on parchment.

  5. Top & Chill: Sprinkle with flaky sea salt. Chill in the fridge or freezer until the coating is firm.

Tips:

  • Store in the fridge for a soft center, or freezer for a firmer bite.

  • Don’t skip the sea salt—it balances the sweetness perfectly!
