Ingredients:
2 lbs chicken breast or thighs
1 cup apple cider (unsweetened)
½ cup low sugar BBQ sauce
1 onion, sliced
1 tsp smoked paprika (optional)
2 cloves garlic, minced (optional)
1 tsp cinnamon (optional)
Salt and pepper to taste
Instructions:
Add the chicken and all ingredients to a slow cooker.
Cook on low for 3 hours.
Shred the chicken with two forks.
Serve with rice, potatoes, or in sandwiches.
Tips:
If using chicken breast, check for doneness around 2.5 hours to avoid overcooking.
