Crispy Cassava Fries (Air Fryer)

Ingredients

• 1 large cassava root (about 1–1.5 lb)

Not Counted (but used):
• 1–2 tablespoons olive oil
• 1 teaspoon salt (for boiling + seasoning)
• Black pepper

Instructions

  1. Peel the cassava.
    Cut the cassava into large sections (about 3–4 inches long).
    Use a knife to remove the thick outer skin completely.
    Make sure no brown skin remains — it’s tough.

  2. Cut and remove the core.
    Slice each piece in half lengthwise.
    You’ll see a hard, stringy core in the center — remove it.
    Then cut into fry-sized pieces.

  3. Boil until soft.
    Place cassava in a pot and cover with water.
    Add a pinch of salt.
    Bring to a boil, then simmer 15–20 minutes until:
    • Fork goes in easily
    • Cassava is soft but not falling apart

  4. Drain and dry.
    Drain the cassava and let it sit a few minutes.
    Pat dry with a towel if needed.
    Dry = crispier fries.

  5. Preheat air fryer.
    Set air fryer to 400°F (200°C)

  6. Season.
    Toss cassava with olive oil, salt, and pepper.
    Make sure pieces are lightly coated.

  7. Air fry.
    Place in a single layer (don’t overcrowd).
    Cook 12–15 minutes, shaking halfway, until:
    • Golden
    • Crispy on the outside

  8. Serve.
    Remove and serve immediately.

Tips

• Boiling first is key — don’t skip it.
• If not soft after boiling, cook longer — this step matters most.
• Don’t overcrowd the air fryer or they won’t crisp.
• Works great with simple dips (ketchup, mayo, garlic sauce).
• Inside should be soft and slightly fluffy, outside crispy.
