Bacon Breakfast Burrito

Ingredients:
1 large tortilla (flour or whole wheat)
2 slices bacon
2 eggs
¼ cup shredded cheese (cheddar or your favorite)
½ cup cooked tater tots or small diced potatoes
Instructions:
Cook the bacon:
Place bacon strips in a cold skillet.
Turn the heat to medium and cook until crispy, flipping as needed (about 6–8 minutes total).
Remove and set on a paper towel to drain.
Cook the eggs:
Crack the eggs into a bowl and whisk until combined.
Pour into a nonstick skillet over medium heat.
Scramble gently with a spatula until just cooked through (about 2–3 minutes).
Remove from heat.
Cook or heat the potatoes:
If using frozen tater tots, cook according to package instructions (oven or air fryer).
If using diced potatoes, sauté in a little oil over medium heat with salt and pepper until golden and tender (about 10 minutes).
Warm the tortilla:
Heat tortilla in a dry skillet for 10–15 seconds per side until soft and pliable.
Assemble the burrito:
Place the tortilla on a flat surface.
Add scrambled eggs, cooked bacon (broken into pieces), cooked potatoes, and shredded cheese to the center.
Fold the sides in, then roll tightly from the bottom into a burrito shape.
Optional – Toast the burrito:
Place the wrapped burrito seam-side down in a skillet and toast for 1–2 minutes per side for a golden, crispy finish.
Tips:
Great for meal prep! Make multiple burritos at once and store them for later.
To freeze: Wrap burritos individually in foil or parchment, then place in a freezer-safe bag.
To reheat from frozen:
Microwave: Unwrap and heat on a microwave-safe plate for 2–3 minutes, flipping halfway.
Oven: Bake at 375°F (190°C) wrapped in foil for 25–30 minutes until heated through.
Swap bacon for turkey bacon or cooked sausage.
Add hot sauce or salsa before serving for extra flavor.
