Bacon Breakfast Burrito

Ingredients:

  • 1 large tortilla (flour or whole wheat)

  • 2 slices bacon

  • 2 eggs

  • ¼ cup shredded cheese (cheddar or your favorite)

  • ½ cup cooked tater tots or small diced potatoes

Instructions:

  1. Cook the bacon:

    • Place bacon strips in a cold skillet.

    • Turn the heat to medium and cook until crispy, flipping as needed (about 6–8 minutes total).

    • Remove and set on a paper towel to drain.

  2. Cook the eggs:

    • Crack the eggs into a bowl and whisk until combined.

    • Pour into a nonstick skillet over medium heat.

    • Scramble gently with a spatula until just cooked through (about 2–3 minutes).

    • Remove from heat.

  3. Cook or heat the potatoes:

    • If using frozen tater tots, cook according to package instructions (oven or air fryer).

    • If using diced potatoes, sauté in a little oil over medium heat with salt and pepper until golden and tender (about 10 minutes).

  4. Warm the tortilla:

    • Heat tortilla in a dry skillet for 10–15 seconds per side until soft and pliable.

  5. Assemble the burrito:

    • Place the tortilla on a flat surface.

    • Add scrambled eggs, cooked bacon (broken into pieces), cooked potatoes, and shredded cheese to the center.

    • Fold the sides in, then roll tightly from the bottom into a burrito shape.

  6. Optional – Toast the burrito:

    • Place the wrapped burrito seam-side down in a skillet and toast for 1–2 minutes per side for a golden, crispy finish.

Tips:

  • Great for meal prep! Make multiple burritos at once and store them for later.

  • To freeze: Wrap burritos individually in foil or parchment, then place in a freezer-safe bag.

  • To reheat from frozen:

    • Microwave: Unwrap and heat on a microwave-safe plate for 2–3 minutes, flipping halfway.

    • Oven: Bake at 375°F (190°C) wrapped in foil for 25–30 minutes until heated through.

  • Swap bacon for turkey bacon or cooked sausage.

  • Add hot sauce or salsa before serving for extra flavor.
