Ingredients:

  • 4 salmon fillets (6 oz each) or a whole salmon

  • 2 tablespoons Dijon mustard

  • 2 tablespoons olive oil

  • 1 lemon, juiced

  • Salt and pepper, to taste

Instructions:

  1. Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.

  2. Season Salmon: Pat salmon dry. Season both sides with salt and pepper.

  3. Prepare Marinade: In a small bowl, mix Dijon mustard, olive oil, and lemon juice.

  4. Coat Salmon: Brush the marinade evenly over each salmon fillet or whole salmon.

  5. Bake:

    • Salmon Fillets (about 1 inch thick): Bake for 12-15 minutes, until opaque and flaky. If fillets are thicker, add 2-3 extra minutes.

    • Whole Salmon (2-3 lbs): Bake for 20-25 minutes. If it’s a larger salmon (4+ lbs), increase baking time to 25-30 minutes.

    • Optional: Loosely cover a whole salmon with foil for the first 15 minutes, then remove for the final 5-10 minutes to allow it to brown.

  6. Check for Doneness:

    • The internal temperature should be 125-130°F (52-54°C) for medium or 140-145°F (60-63°C) for well-done.

    • If you don’t have a thermometer, use a fork—if the salmon flakes easily, it’s ready.

  7. Optional Finishing Touch: Drizzle extra lemon juice over the cooked salmon before serving.

Tips:

  • Crispy Skin: For extra crispy skin, bake skin-side down on a preheated baking sheet or broil for the last 2 minutes.

  • Flavor Boost: Add fresh herbs like dill or parsley before serving.

  • Serving Suggestions: Pairs well with rice, quinoa, roasted potatoes, salad, or vegetables.
