Ingredients:

  • 5 large eggs

  • 6 slices prosciutto

  • 1/4 cup shredded cheese (any variety)

  • 1/2 cup fresh spinach, chopped

  • Salt & pepper (to taste)

Instructions:

  1. Preheat Oven: Preheat oven to 400°F (200°C). Lightly grease a 6-cup muffin tin with oil or non-stick spray.

  2. Line Muffin Cups: Press 1 slice of prosciutto into each muffin cup to form a cup shape.

  3. Mix Eggs: In a bowl, whisk eggs, spinach, cheese, salt, and pepper.

  4. Fill Cups: Pour egg mixture evenly into each prosciutto-lined muffin cup.

  5. Bake: Bake for 20 minutes or until eggs are set and fully cooked.
