Beef, Bacon & Parmesan Taco Casserole

Ingredients
1 lb ground beef
1 packet taco seasoning
5 eggs
½ cup grated parmesan cheese (or more for extra structure)
1 medium onion, finely chopped (optional)
4 strips bacon, cooked and chopped
Salt and pepper, to taste
Avocado oil or cooking spray (to grease dish)
Instructions
Preheat oven: Set to 350°F (175°C). Lightly grease an 8×8 or 9×9 baking dish.
Cook the beef:
In a skillet over medium heat, cook bacon until crisp. Remove and set aside, leaving a little bacon fat in the pan.
Add onion and sauté until softened (about 3–4 minutes).
Add ground beef and cook until browned.
Stir in taco seasoning (and water if the packet calls for it). Cook until fully browned and liquid evaporates.
Stir in the chopped bacon, then transfer the mixture into the prepared baking dish and press into an even layer.
Mix the topping:
In a bowl, crack and beat the 5 eggs.
Stir in parmesan cheese, salt, and pepper.
Assemble:
Pour the egg mixture evenly over the beef layer.
Tilt or shake the dish gently to spread.
Bake:
Bake uncovered for 30–35 minutes, until the top is golden and the center is set.
Rest & serve:
Let casserole rest 10–15 minutes before slicing (helps it hold together).
Optional toppings: salsa, avocado slices, or shredded lettuce.
Tips
Let cool slightly before slicing — it firms up as it sits.
Stores well in the fridge for meal prep; reheat in microwave or oven.
Using a glass or ceramic dish gives even cooking and a golden crust.
