Beef, Bacon & Parmesan Taco Casserole

Ingredients

  • 1 lb ground beef

  • 1 packet taco seasoning

  • 5 eggs

  • ½ cup grated parmesan cheese (or more for extra structure)

  • 1 medium onion, finely chopped (optional)

  • 4 strips bacon, cooked and chopped

  • Salt and pepper, to taste

  • Avocado oil or cooking spray (to grease dish)

Instructions

  1. Preheat oven: Set to 350°F (175°C). Lightly grease an 8×8 or 9×9 baking dish.

  2. Cook the beef:

    • In a skillet over medium heat, cook bacon until crisp. Remove and set aside, leaving a little bacon fat in the pan.

    • Add onion and sauté until softened (about 3–4 minutes).

    • Add ground beef and cook until browned.

    • Stir in taco seasoning (and water if the packet calls for it). Cook until fully browned and liquid evaporates.

    • Stir in the chopped bacon, then transfer the mixture into the prepared baking dish and press into an even layer.

  3. Mix the topping:

    • In a bowl, crack and beat the 5 eggs.

    • Stir in parmesan cheese, salt, and pepper.

  4. Assemble:

    • Pour the egg mixture evenly over the beef layer.

    • Tilt or shake the dish gently to spread.

  5. Bake:

    • Bake uncovered for 30–35 minutes, until the top is golden and the center is set.

  6. Rest & serve:

    • Let casserole rest 10–15 minutes before slicing (helps it hold together).

    • Optional toppings: salsa, avocado slices, or shredded lettuce.

Tips

  • Let cool slightly before slicing — it firms up as it sits.

  • Stores well in the fridge for meal prep; reheat in microwave or oven.

  • Using a glass or ceramic dish gives even cooking and a golden crust.
