Turkey & Sweet Potato Wrap

Ingredients:

  • ½ cup cooked or shredded turkey (or chicken)

  • ½ cup cooked sweet potato (mashed or diced)

  • 2–3 tablespoons shredded cheese

  • 1 tablespoon spicy mayo (or your favorite sauce)

  • 1–2 tablespoons chopped onion

  • 1 tortilla

Instructions:

  1. Bake the sweet potato (if not already cooked):

    • Preheat oven to 400°F (200°C).

    • Wash and dry 1 small sweet potato.

    • Pierce several times with a fork and place on a baking sheet.

    • Bake for 40–45 minutes until fork-tender.

    • Let cool slightly, then peel and mash or dice.

  2. Reheat the cooked sweet potato and turkey if they’re coming from the fridge.

  3. Warm your tortilla in a skillet or microwave for 10–15 seconds to make it easier to roll.

  4. Layer turkey, sweet potato, shredded cheese, and chopped onion in the center of the tortilla.

  5. Drizzle with spicy mayo or your favorite sauce (ranch, chipotle, etc.).

  6. Fold in the sides, then roll up from the bottom to form a burrito.

  7. Slice in half and enjoy warm.

Tips:

  • Use ground turkey if you don’t have shredded—just cook and season with salt and pepper.

  • Add greens like spinach or arugula for extra fiber.

  • Make it dairy-free by skipping the cheese or using a dairy-free version.
