Ingredients:
2 cups egg whites
1/2 cup full-fat cottage cheese
Vegetables of your choice, chopped (e.g., onions, bell peppers, mushrooms, spinach)
4-5 slices cooked sugar-free bacon, chopped
Salt and pepper, to taste
Any additional spices (e.g., garlic powder, paprika, or Italian seasoning)
Instructions:
Cook the Bacon & Prep Veggies: Cook bacon in advance and chop desired vegetables.
Preheat Oven: Preheat oven to 350°F (180°C). Place a baking dish with 1 inch of water on the bottom rack to create humidity for even cooking.
Blend Egg Mixture: In a blender, combine egg whites, cottage cheese, salt, pepper, and spices. Blend for 20 seconds until smooth.
Prepare Muffin Tin: Spray muffin tin with non-stick spray. Divide veggies and chopped bacon evenly into the muffin cups.
Pour Egg Mixture: Fill muffin cups with egg white mixture, leaving some space at the top.
Bake: Bake for 30 minutes or until the center is set. Let cool for 5 minutes.
Remove & Serve: Use a spatula or fork to remove the egg white bites from the muffin tin. Serve and enjoy!
Tips:
Storage: Store in the fridge for up to 3 days or freeze for 2-3 months. Reheat in the microwave or oven.
