Egg White Bites

Ingredients:

  • 2 cups egg whites

  • 1/2 cup full-fat cottage cheese

  • Vegetables of your choice, chopped (e.g., onions, bell peppers, mushrooms, spinach)

  • 4-5 slices cooked sugar-free bacon, chopped

  • Salt and pepper, to taste

  • Any additional spices (e.g., garlic powder, paprika, or Italian seasoning)

Instructions:

  1. Cook the Bacon & Prep Veggies: Cook bacon in advance and chop desired vegetables.

  2. Preheat Oven: Preheat oven to 350°F (180°C). Place a baking dish with 1 inch of water on the bottom rack to create humidity for even cooking.

  3. Blend Egg Mixture: In a blender, combine egg whites, cottage cheese, salt, pepper, and spices. Blend for 20 seconds until smooth.

  4. Prepare Muffin Tin: Spray muffin tin with non-stick spray. Divide veggies and chopped bacon evenly into the muffin cups.

  5. Pour Egg Mixture: Fill muffin cups with egg white mixture, leaving some space at the top.

  6. Bake: Bake for 30 minutes or until the center is set. Let cool for 5 minutes.

  7. Remove & Serve: Use a spatula or fork to remove the egg white bites from the muffin tin. Serve and enjoy!

Tips:

  • Storage: Store in the fridge for up to 3 days or freeze for 2-3 months. Reheat in the microwave or oven.
