Egg, Ham & Cheese Burrito

Ingredients:

  • 6 large eggs

  • 150 g (5 oz) lean ham, diced

  • 3/4 cup shredded cheddar cheese

  • 3 large whole wheat tortillas

  • 1 tbsp butter or oil (for cooking)

  • Salt and pepper, to taste

Instructions:

  1. Cook the Eggs and Ham: Melt butter in a large skillet over medium heat. Add diced ham and cook for 2-3 minutes until slightly browned.

  2. Scramble the Eggs: In a bowl, beat the eggs with a pinch of salt and pepper. Pour into the skillet with ham. Stir constantly for 3-4 minutes until fully cooked but still soft.

  3. Assemble the Burritos: Place a tortilla on a flat surface. Add one-third of the scrambled egg and ham mixture in the center. Sprinkle 1/4 cup shredded cheddar cheese on top.

  4. Fold the Burritos: Fold the sides of the tortilla over the filling and roll tightly to form a burrito. Repeat for the remaining tortillas and filling.

  5. Optional: Heat the burritos in a skillet over medium heat for 1-2 minutes per side to crisp the tortilla and melt the cheese.

  6. Serve: Enjoy warm with salsa or hot sauce.
