Ingredients:
6 large eggs
150 g (5 oz) lean ham, diced
3/4 cup shredded cheddar cheese
3 large whole wheat tortillas
1 tbsp butter or oil (for cooking)
Salt and pepper, to taste
Instructions:
Cook the Eggs and Ham: Melt butter in a large skillet over medium heat. Add diced ham and cook for 2-3 minutes until slightly browned.
Scramble the Eggs: In a bowl, beat the eggs with a pinch of salt and pepper. Pour into the skillet with ham. Stir constantly for 3-4 minutes until fully cooked but still soft.
Assemble the Burritos: Place a tortilla on a flat surface. Add one-third of the scrambled egg and ham mixture in the center. Sprinkle 1/4 cup shredded cheddar cheese on top.
Fold the Burritos: Fold the sides of the tortilla over the filling and roll tightly to form a burrito. Repeat for the remaining tortillas and filling.
Optional: Heat the burritos in a skillet over medium heat for 1-2 minutes per side to crisp the tortilla and melt the cheese.
