Ingredients:

  • 2 medium potatoes, boiled and cubed. Quick Option: Use frozen potatoes like tater tots for convenience.

  • 1 tbsp olive oil

  • 2 slices of bacon

  • 2 breakfast sausages

  • 1/2 cup shredded cheese (cheddar or your choice)

  • 4 eggs

  • Salt and pepper to taste

Instructions:

  1. Boil Potatoes: Boil potatoes in salted water until tender (10-15 minutes). Drain, let cool, and cut into cubes.

  2. Crisp Potatoes: Heat olive oil in a large pan over medium-high heat. Add cubed potatoes, season with salt and pepper, and cook until golden and crispy (about 10 minutes), stirring occasionally.

  3. Cook Bacon & Sausage: In a separate pan, cook bacon until crispy, then drain and crumble. Cook sausages according to package instructions, then cut into small pieces.

  4. Preheat Broiler: In an oven-safe dish, mix the crispy potatoes, crumbled bacon, and sausage pieces.

  5. Melt Cheese: Sprinkle shredded cheese over the potato mixture. Broil for a few minutes until the cheese is melted and bubbly. Watch closely to avoid burning.

  6. Cook Eggs: Heat a little olive oil or butter in a pan over medium heat. Cook eggs over-easy until whites are set but yolks remain runny (about 2-3 minutes). Season with salt and pepper.

  7. Assemble & Serve: Remove skillet from oven and top with eggs. Serve immediately.
