Ingredients:

  • 1 lb chicken breast, cut into 1-inch cubes

  • 1 cup Greek yogurt

  • 2 tbsp lemon juice

  • 2 cloves garlic, minced

  • 1 tbsp dried oregano

Instructions:

  1. Cut the Chicken: Dice the chicken breast into 1-inch cubes for even cooking.

  2. Prepare Marinade: In a large bowl, mix Greek yogurt, lemon juice, garlic, and oregano until well combined.

  3. Marinate Chicken: Add chicken cubes to the bowl, coating them well in the marinade. Cover and refrigerate for at least 30 minutes (up to 4 hours for better flavor).

  4. Preheat Grill: Preheat a grill or grill pan to medium-high heat. If using wooden skewers, soak them in water for at least 20 minutes to prevent burning.

  5. Thread Skewers: Thread the marinated chicken cubes onto 4 skewers, distributing them evenly.

  6. Grill: Cook skewers for 10-12 minutes, turning occasionally, until the chicken is fully cooked and grill marks appear. The internal temperature should reach 165°F (75°C).

  7. Serve: Serve hot and enjoy!

Tips:

  • Add Fresh Herbs: Boost flavor by adding parsley, dill, or fresh oregano to the marinade.

  • Cooking Alternatives: If a grill isn’t available, cook on a grill pan over medium-high heat or broil in the oven for similar results.

  • Serving Suggestions: Pair with grilled vegetables, pita bread, or a fresh salad for a balanced meal.
