Turkey Meatloaf

Note: This recipe is AMAZING with just the five basic ingredients, but if you want to take it up a notch, I’ve included a full version with extra add-ins for even more flavor. Choose whichever works best for you!

Ingredients:

  • 1 lb ground turkey

  • 8 oz mushrooms, finely chopped

  • 1 large onion, chopped

  • 1 egg, lightly beaten

  • 1/2 cup breadcrumbs (panko or regular)

  • 1/4 cup water (or chicken stock)

  • salt, and black pepper (to taste)

  • Optional: olive oil (for greasing)

Full Recipe Version (Optional Add-Ins):

  • 2 tbsp olive oil

  • 2 cloves garlic, chopped

  • Pinch red pepper flakes

  • 1 tbsp Worcestershire sauce

  • 6 oz crumbled feta cheese

  • 1 (8 oz) can tomato sauce

  • 1 shallot, sliced

Instructions:

  1. Preheat Oven: Preheat oven to 350°F (175°C). Lightly grease a baking sheet with olive oil or line with parchment paper.

  2. Mix Ingredients: In a large bowl, combine ground turkey, mushrooms, onion, egg, breadcrumbs, and chicken stock. Season with salt and pepper. Mix gently until just combined. Do not overmix.

  3. Shape Loaf: Form mixture into a rectangular loaf and place on prepared baking sheet.

  4. Bake: Bake for 1 hour, or until internal temperature reaches 165°F (74°C). Let rest for 5-10 minutes before slicing.

Full Recipe Version (Optional Steps):

  1. Sauté Vegetables: Heat olive oil in a skillet over medium heat. Sauté mushrooms, onions, and garlic until softened (5-6 minutes). Add red pepper flakes, Worcestershire sauce, and chicken stock. Let cool before adding to meat mixture.

  2. Mix with Feta: Stir cooled veggie mixture and crumbled feta into turkey mixture.

  3. Top with Sauce & Shallots: Shape loaf on baking sheet. Top with tomato sauce and layer sliced shallots over the top.

  4. Bake: Bake for 1 hour or until internal temperature reaches 165°F (74°C). Let rest before slicing.

Tips:

  • Avoid Overmixing: Mix gently to prevent a tough meatloaf.

  • Check Doneness: Use a meat thermometer to ensure internal temperature reaches 165°F.
