Grilled Cilantro Lime Chicken Wings

Ingredients

• 2–3 lbs chicken wings
• Juice of 2 limes
• ½ cup fresh cilantro, chopped
• 3–4 garlic cloves, minced
• 2 tablespoons olive oil
• 1–2 teaspoons salt
• 1 teaspoon black pepper

Optional Add-Ins

• 1 teaspoon garlic powder
• 1 teaspoon onion powder
• ½ teaspoon paprika
• ¼ teaspoon cayenne pepper
• Lime zest from 1 lime

Instructions

  1. Prepare the wings.
    Pat the wings dry with paper towels.

    Dry wings brown better on the grill.

  2. Make the marinade.
    In a large bowl, combine:

    • Lime juice
    • Cilantro
    • Garlic
    • Olive oil
    • Salt and pepper

    Add any optional seasonings if using.

  3. Marinate the wings.
    Add wings to the bowl and toss until evenly coated.

    Cover and refrigerate for:

    • Minimum: 30 minutes
    • Best flavor: 2–8 hours

  4. Preheat the grill.
    Heat grill to medium heat (375–425°F).

    Clean and oil the grates if needed.

  5. Grill the wings.
    Place wings directly on the grill.

    Cook for about 20–25 minutes total, turning every 4–5 minutes.

    The wings are done when:

    • Internal temperature reaches 175–185°F
    • Skin is lightly charred
    • Juices run clear

  6. Rest briefly.
    Remove from the grill and let rest for 5 minutes.

  7. Serve.
    Squeeze fresh lime juice over the wings and sprinkle with extra cilantro before serving.

Tips

• Wings are more forgiving than chicken breast and taste best around 175–185°F.
• If flare-ups occur, move wings to a cooler section of the grill.
• Turning every few minutes helps prevent burning.
• Fresh lime juice added after grilling brightens the flavor.
• Great served with salad, roasted potatoes, fries, rice, grilled vegetables, or fresh fruit.

Easy Shortcut

Instead of making your own marinade, combine:

• 2–3 tablespoons olive oil
• Juice of 2 limes
• 2–3 tablespoons chopped cilantro
• Your favorite chicken seasoning blend

Toss with the wings and grill as directed.
