Ingredients

  • 1 lb ground beef

  • 1 packet taco seasoning

  • 5 eggs

  • 1½ cups shredded mozzarella cheese

  • (Optional) 1 tbsp grated parmesan (for more structure)

  • Salt and pepper, to taste

  • Avocado oil or cooking spray (to grease dish)

Instructions

  1. Preheat the oven to 350°F (175°C). Lightly grease an 8×8 or 9×9 baking dish with oil or cooking spray.

  2. Cook the beef:
    – In a skillet over medium heat, brown the ground beef.
    – Add the taco seasoning (and a few tablespoons of water if the packet calls for it).
    – Stir and cook until fully browned and no liquid remains.
    – Transfer the beef to the prepared baking dish and gently press it into an even layer.

  3. Mix the topping:
    – In a bowl, crack and beat the 5 eggs.
    – Stir in the shredded mozzarella and optional parmesan.
    – Add a pinch of salt and pepper if desired.

  4. Assemble:
    – Pour the egg mixture evenly over the beef layer.
    – Tilt or shake the dish gently to help the eggs spread out and cover everything.

  5. Bake:
    – Place in the oven and bake uncovered for 30–35 minutes, or until the top is golden and the center is set.

  6. Let it rest:
    – Let the casserole rest for 10–15 minutes before slicing.
    – This step is important so it holds together cleanly when served.

  • For best texture, let it cool before slicing. It firms up as it sits.
