Ingredients
1 lb ground beef
1 packet taco seasoning
5 eggs
1½ cups shredded mozzarella cheese
(Optional) 1 tbsp grated parmesan (for more structure)
Salt and pepper, to taste
Avocado oil or cooking spray (to grease dish)
Instructions
Preheat the oven to 350°F (175°C). Lightly grease an 8×8 or 9×9 baking dish with oil or cooking spray.
Cook the beef:
– In a skillet over medium heat, brown the ground beef.
– Add the taco seasoning (and a few tablespoons of water if the packet calls for it).
– Stir and cook until fully browned and no liquid remains.
– Transfer the beef to the prepared baking dish and gently press it into an even layer.Mix the topping:
– In a bowl, crack and beat the 5 eggs.
– Stir in the shredded mozzarella and optional parmesan.
– Add a pinch of salt and pepper if desired.Assemble:
