Pork Medallions with 5-Ingredient Honey Mustard Sauce

Ingredients
1 small pork tenderloin (≈12 oz), sliced into medallions
1 tbsp olive oil
Salt and pepper, to taste
Honey Mustard Sauce:
2 tbsp Dijon mustard
2 tbsp honey
1 tbsp lemon juice
1 tbsp olive oil
Salt and pepper, to taste
Instructions
Season pork medallions with salt and pepper.
Heat olive oil in a skillet over medium-high heat.
Sear the medallions for 3–4 minutes per side, until browned and fully cooked (internal temp 145°F / 63°C).
While pork is cooking, whisk together all sauce ingredients in a small bowl.
Once pork is cooked, drizzle the honey mustard sauce over the medallions. Serve immediately.
Tips
You can also warm the sauce in the pan for 1 minute before drizzling if you prefer it warm.
Great with roasted potatoes or over a fresh salad.
Store leftover sauce in the fridge for up to 1 week.
