Pork Medallions with 5-Ingredient Honey Mustard Sauce

Ingredients

  • 1 small pork tenderloin (≈12 oz), sliced into medallions

  • 1 tbsp olive oil

  • Salt and pepper, to taste

Honey Mustard Sauce:

  • 2 tbsp Dijon mustard

  • 2 tbsp honey

  • 1 tbsp lemon juice

  • 1 tbsp olive oil

  • Salt and pepper, to taste

Instructions

  1. Season pork medallions with salt and pepper.

  2. Heat olive oil in a skillet over medium-high heat.

  3. Sear the medallions for 3–4 minutes per side, until browned and fully cooked (internal temp 145°F / 63°C).

  4. While pork is cooking, whisk together all sauce ingredients in a small bowl.

  5. Once pork is cooked, drizzle the honey mustard sauce over the medallions. Serve immediately.

Tips

  • You can also warm the sauce in the pan for 1 minute before drizzling if you prefer it warm.

  • Great with roasted potatoes or over a fresh salad.

  • Store leftover sauce in the fridge for up to 1 week.
