Pecan Pie Energy Balls

Ingredients:

  • 1 cup raw pecans

  • 1 cup rolled oats

  • 1 cup pitted dates, about 8-10 dates (soak in warm water for 10 minutes, then drain)

  • 3 tablespoons maple syrup

  • ¼ teaspoon salt

  • ½ teaspoon ground cinnamon

  • ½ teaspoon vanilla extract (optional)

  • 1 scoop (about 30g) vanilla protein powder (optional)

Instructions:

  1. Optional: Toast the pecans and oats at 350°F (175°C) for 7–10 minutes until lightly golden. Let cool before using.

  2. Soak the dates: Place pitted dates in a bowl of warm water for 10 minutes. Drain well.

  3. If using a food processor: Add dates, pecans, oats, maple syrup, salt, cinnamon, vanilla, and protein powder (if using). Blend until a sticky dough forms.

  4. No food processor: Mash soaked dates into a paste with a fork or knife. Blend pecans and oats until finely ground. Mix everything together in a bowl until fully combined.

  5. Roll into 20 small balls and place on a plate or tray.

  6. Refrigerate for at least 30 minutes to firm up.

Tips:

  • Storage: Keep in an airtight container in the fridge for up to 1 week.

  • Customize: Add chocolate chips, shredded coconut, or chia seeds if desired.

  • Sweeter Option: Taste the mix before rolling—add 1 extra tablespoon maple syrup if needed.

  • Crunchier Texture: If you want more crunch, just chop the pecans instead of blending them fully.
