Chocolate Walnut Protein Bites

Total Time: 10 minutes (plus 30 minutes chill time)

Ingredients:

  • 1 cup oats

  • ½ cup walnuts

  • 8–10 dates

  • 1 scoop protein powder (optional)

  • ½ cup dark chocolate chips

  • 1 tablespoon chopped walnuts (for topping)

Instructions:

  1. Soak the Dates: Place the dates in warm water for 15 minutes to soften. Drain and remove pits.

  2. If using a food processor:

    • Add soaked dates and walnuts to the processor and blend into a smooth, sticky paste.

    • Add oats and protein powder (if using) and pulse until well combined.

  3. If not using a food processor:

    • Finely chop the softened dates with a knife until a paste forms.

    • Blend the oats and walnuts together until fine.

    • Mix everything (including protein powder, if using) in a large bowl until a dough forms.

  4. Roll into Bites: Form into 10–12 bite-sized balls and place on a plate or tray.

  5. Chill & Finish: Refrigerate for 30 minutes. Drizzle with melted chocolate and top with chopped walnuts before serving.

Tips:

  • Store in an airtight container in the refrigerator for up to 1 week or freeze for longer.

  • Swap walnuts for almonds or pecans if preferred.
