Ingredients:

  • ⅓ cup Kodiak pancake mix (or any high-protein pancake mix)

  • 1 scoop protein powder (flavor of your choice)

  • ¼ cup egg whites

  • ¼ cup cashew milk

  • A pinch of cinnamon

Instructions:

  1. In a mixing bowl, whisk together the pancake mix, protein powder, egg whites, cashew milk, and cinnamon until smooth and free of lumps.

  2. Heat a non-stick skillet over medium heat and lightly grease it with oil or non-stick spray.

  3. Pour about ¼ cup of batter into the skillet, tilting the pan in a circular motion to spread the batter thinly and evenly.

  4. Cook for 1–2 minutes, until the edges of the crepe lift easily from the pan. Flip carefully and cook for another 1 minute until golden brown.

  5. Remove the crepe from the skillet and repeat with the remaining batter. Adjust the heat as needed to prevent burning.

  6. Serve warm with your favorite toppings, such as fresh fruit, Greek yogurt, or a drizzle of honey.

Tips:

  • Ensure the skillet is well-heated before adding the batter for even cooking.

  • If the batter is too thick, add a little more cashew milk for a thinner consistency.

  • These crepes are high in protein, making them a great post-workout meal or a satisfying breakfast.
