Grilled Scallop, Prosciutto & Cherry Tomato Skewers

Ingredients:
8 large sea scallops
8 slices prosciutto
1 pint cherry tomatoes
¼ cup olive oil
Pinch of salt and freshly ground black pepper (to taste)
4 wooden skewers (soaked in water for at least 10-15 minutes to prevent burning)
Instructions:
Preheat a grill or grill pan over medium-high heat and brush with a thin layer of olive oil.
Pat the scallops dry.
Assemble the skewers by alternating one scallop, one slice of prosciutto (loosely folded), and one cherry tomato. Repeat the pattern until all ingredients are used. Season lightly with salt and black pepper.
Grill the skewers for 2–3 minutes per side, until the scallops are opaque and cooked through, the prosciutto is slightly crisp, and the tomatoes are softened.
Remove from the grill and serve immediately.
Tips:
If using metal skewers, preheat them for a minute before adding ingredients.
Drizzle with balsamic glaze for extra sweetness and acidity (not included in the 5 ingredients).
Serve with a side salad or grilled vegetables for a complete meal.
