Chicken Alfredo

Ingredients:

  • 1 large chicken breast, diced

  • 1 cup Alfredo sauce (store-bought or homemade)

  • 1½ cups uncooked pasta (like penne or fettuccine)

  • ½ cup shredded Parmesan cheese

  • 1 clove garlic, minced

  • Salt & Pepper to taste

Instructions:

  1. Cook the pasta: Boil in salted water according to package directions. Drain and set aside.

  2. Cook the chicken: In a skillet with a little olive oil, cook the diced chicken with garlic over medium heat until fully cooked. Season with salt and pepper.

  3. Add Alfredo sauce: Pour Alfredo sauce into the skillet with the chicken. Simmer for 2–3 minutes.

  4. Combine with pasta: Add cooked pasta to the skillet and stir until well coated.

  5. Finish with cheese: Stir in Parmesan cheese until melted and creamy. Serve warm.

Tips:

  • Use rotisserie chicken to save time.

  • Add a handful of spinach or frozen peas for a little extra color and nutrition (optional).
