Ingredients:
4 large flour tortillas
4 eggs
½ cup cooked sausage, chopped
½ cup shredded cheddar cheese
½ cup hash browns, cooked (store-bought or homemade, see below)
Instructions:
Cook the Sausage: Heat a skillet over medium heat. Add the sausage and cook until browned, breaking it apart as it cooks. Drain any excess grease and set aside.
Prepare the Eggs: In a bowl, whisk together the eggs, a pinch of salt, and pepper.
Cook the Hash Browns:
Using Frozen Hash Browns or Tater Tots: Cook according to package instructions, either in a skillet over medium heat with a little oil, in an air fryer, or in the oven until crispy.
Making Homemade Hash Browns: Peel and grate a medium potato. Place grated potatoes in a clean kitchen towel and squeeze out excess moisture. Heat a skillet with a little oil over medium heat and cook grated potatoes for 3-5 minutes per side until golden and crispy.
Scramble the Eggs: In the same skillet used for sausage, add the whisked eggs. Cook over medium heat, stirring occasionally, until eggs are scrambled and fully cooked.
Warm the Tortillas: Microwave tortillas for 20-30 seconds to make them more pliable.
Assemble the Burritos: Lay a tortilla on a flat surface. Add a portion of scrambled eggs, cooked sausage, hash browns, and shredded cheese. Roll up tightly, folding in the sides as you roll to secure the filling.
Repeat & Serve: Repeat the process for the remaining tortillas. Serve immediately or follow freezing instructions below.
