Shrimp & Feta Pasta

Ingredients:

  • 1 pound (450g) shrimp, peeled and deveined

  • 1 tablespoon olive oil

  • ½ cup (75g) crumbled feta cheese

  • ½ cup (120ml) tomato sauce

  • 4 ounces (115g) pasta (about 1 ¼ cups penne, spaghetti, or fusilli)

  • Salt and pepper, to taste

  • Optional: ¼ cup chopped fresh parsley

Instructions:

  1. Bring a pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.

  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.

  3. Add the shrimp to the skillet and cook for 2-3 minutes per side, or until pink and cooked through.

  4. Stir in the feta cheese, salt, and pepper. Cook for 1-2 minutes until the cheese softens slightly.

  5. Add the tomato sauce to the skillet, stirring to combine. Reduce the heat to low and let simmer for 5 minutes to thicken.

  6. Add the drained pasta to the skillet and toss everything together until evenly coated in sauce.

  7. Plate the pasta and garnish with extra parsley if desired.

Tips:

  • You can use any type of shrimp for this recipe.

  • For a spicier dish, add a pinch of red pepper flakes to the tomato sauce.

  • For extra creaminess, stir in a splash of heavy cream or Greek yogurt.
