Shrimp & Feta Pasta

Ingredients:
1 pound (450g) shrimp, peeled and deveined
1 tablespoon olive oil
½ cup (75g) crumbled feta cheese
½ cup (120ml) tomato sauce
4 ounces (115g) pasta (about 1 ¼ cups penne, spaghetti, or fusilli)
Salt and pepper, to taste
Optional: ¼ cup chopped fresh parsley
Instructions:
Bring a pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.
While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
Add the shrimp to the skillet and cook for 2-3 minutes per side, or until pink and cooked through.
Stir in the feta cheese, salt, and pepper. Cook for 1-2 minutes until the cheese softens slightly.
Add the tomato sauce to the skillet, stirring to combine. Reduce the heat to low and let simmer for 5 minutes to thicken.
Add the drained pasta to the skillet and toss everything together until evenly coated in sauce.
Plate the pasta and garnish with extra parsley if desired.
Tips:
You can use any type of shrimp for this recipe.
For a spicier dish, add a pinch of red pepper flakes to the tomato sauce.
For extra creaminess, stir in a splash of heavy cream or Greek yogurt.
