Ingredients

  • 3 oz cooked steak (sliced or chopped)

  • 2 eggs

  • 1 cup greens (spinach, arugula, or lettuce)

  • ¼ cup corn (fresh, frozen, or canned)

  • ¼ cup diced tomatoes or 2 tbsp salsa

  • 1 tbsp crumbled feta (optional)

  • Salt & pepper, to taste

  • Olive oil, for cooking

Instructions

  1. Cook the eggs:
    In a skillet over medium heat, cook the eggs to your liking (fried, scrambled, or poached). Season with salt and pepper.

  2. Warm or cook the steak:
    If using leftovers, reheat steak in a skillet for 1–2 minutes until warmed through. Otherwise, cook fresh steak to your preferred doneness.

  3. Assemble the bowl:
    Place greens in the base of a bowl. Top with steak, eggs, corn, tomatoes or salsa, and optional feta.

  4. Season and enjoy:
    Drizzle with olive oil, adjust seasoning if needed, and serve immediately.

Tips

  • Add avocado, black beans, roasted peppers, or sautéed onions for extra flavor and nutrients.

  • Swap corn for sweet potato or cooked quinoa for a more filling bowl.

  • You can use ground beef or leftover taco meat instead of steak.

  • For more heat, add jalapeños or a splash of hot sauce.
