Sweet Potato Breakfast Burrito

Ingredients:

  • ½ cup cooked sweet potato (diced or mashed)

  • ½ cup egg whites

  • 1 green onion, chopped

  • 2–3 tablespoons shredded cheese (cheddar or your choice)

  • 1 tortilla (flour or whole wheat)

Instructions:

  1. Bake the sweet potato (if not already cooked):

    • Preheat oven to 400°F (200°C).

    • Wash and dry 1 small sweet potato.

    • Pierce several times with a fork and place on a baking sheet.

    • Bake for 40–45 minutes until fork-tender.

    • Let cool slightly, then peel and mash or dice.

  2. Reheat the sweet potato if it was cooked earlier.

  3. Heat a nonstick skillet over medium heat.

  4. Add egg whites and chopped green onion. Cook for 2–3 minutes, stirring gently, until fully set.

  5. Stir in the cooked sweet potato and shredded cheese.

  6. Cook for 1–2 more minutes, just until everything is warmed through and the cheese is melted.

  7. Warm the tortilla in a pan or microwave for 10–15 seconds.

  8. Spoon the filling into the center of the tortilla.

  9. Roll it up like a burrito and serve.

Tips:

  • Add spicy mayo, hot sauce or salsa for extra flavor.
