Ground Beef Tacos

Ingredients:

  • 4 oz ground beef

  • 1 tsp olive oil

  • 1–2 tsp taco seasoning (or just salt & pepper)

  • 2 small soft tortillas

  • Optional toppings: shredded cheese, salsa, Greek yogurt or sour cream, avocado, chopped lettuce, onion, cilantro

Instructions:

  1. Heat a skillet over medium heat. Add olive oil and ground beef.

  2. Cook, breaking up the meat with a spatula, for 6–8 minutes until browned and fully cooked.

  3. Add taco seasoning and a splash of water. Stir and let simmer for another 1–2 minutes until well combined.

  4. While beef is cooking, warm the tortillas in a skillet or microwave until soft and pliable.

  5. Fill tortillas with cooked beef and your favorite toppings.

Tips:

  • Great for meal prep: cook the meat ahead of time and reheat when ready to eat.

  • Keep toppings simple: salsa, avocado, or cheese make it delicious with minimal effort.

  • Want extra crunch? Add some shredded cabbage or romaine.

  • Use ground turkey or chicken for a lighter option.
