Avocado Toast with Egg

Ingredients:

  • 1 slice of bread

  • 1/4 avocado, mashed (or guacamole)

  • Salt & pepper (to taste)

  • 1-2 egg

Instructions:

  1. Toast Bread: Toast the bread to your liking.

  2. Prepare Avocado: Mash the avocado with a fork until smooth. Spread evenly over the toast. Season with salt and pepper.

  3. Cook Egg (Optional): Choose your preferred style:

    • Fried: Heat a small skillet over medium heat. Add a little olive oil or butter. Crack in the egg and cook until whites are set and yolk is runny (about 2-3 minutes). Flip for an over-easy egg and cook 30 seconds more.

    • Poached: Bring water to a gentle simmer in a pot. Add a splash of vinegar. Crack the egg into a bowl, then gently slide it into the water. Cook for 3-4 minutes until whites are set.

    • Boiled: Bring water to a boil. Add the egg and cook based on your desired doneness:

      • Soft yolk: 6 minutes

      • Medium yolk: 7-8 minutes

      • Fully cooked yolk: 10-12 minutes

      Transfer the eggs to a bowl of ice water and let them sit for 5 minutes before peeling and slicing.

  4. Assemble: Place the cooked egg on top of the avocado toast. Serve immediately.

  • Creamier Texture: Mash avocado until smooth.

  • Boost Flavor: Add a squeeze of lemon or lime to the avocado.

  • Extra Toppings: Try feta cheese, sliced tomatoes, red onions, or chili flakes for more variety.

  • Fresh Herbs & Greens: Add basil, cilantro, dill, or parsley, as well as leafy greens like arugula or microgreens for extra freshness.

  • Make Ahead: Assemble toast as directed, wrap tightly, and refrigerate for up to 24 hours. Add lime juice to the avocado to prevent browning. Toast bread fresh before assembling for the best results.
