Carne Asada Marinade

Ingredients:
1 1/2 lbs flank steak
1/3 cup olive oil
Juice of 3 limes (about 6 tbsp)
4 garlic cloves, minced
1/2 cup fresh cilantro, chopped
1/2 tsp chili powder
1 tsp paprika (optional)
Salt & pepper (to taste)
Instructions:
Prepare Marinade: In a large bowl, whisk olive oil, lime juice, garlic, cilantro, cumin, chili powder, salt, and pepper.
Marinate Steak: Place flank steak in a resealable plastic bag or shallow dish. Pour marinade over steak, ensuring it's evenly coated. Seal and refrigerate for at least 2 hours (or overnight for best flavor).
Cook Steak: Remove steak from marinade, letting excess drip off. Grill over medium-high heat for 4-5 minutes per side or until desired doneness.
Rest Steak: Transfer steak to a cutting board. Let rest for 5 minutes.
Slice & Serve: Slice steak against the grain into thin strips. Serve with tortillas, rice, tacos, salad, tostadas, or your favorite sides.
Tips:
Marinating: For maximum flavor, marinate for 8-12 hours.
Dry Brining: For even better texture and taste, salt steak generously the night before and refrigerate uncovered. This enhances flavor and improves texture.
Grilling Alternative: If grilling isn't an option, pan-sear the steak over medium-high heat for a similar result.
Baking Option for Flank Steak:
Preheat oven to 425°F (220°C).
Place steak on a foil-lined baking sheet with a wire rack (if available).
Bake for 12-15 minutes for medium-rare or 15-18 minutes for medium.
Optional: Broil for 1-2 minutes at the end for a slight char.
Rest for 5 minutes, then slice against the grain and serve.
