Ingredients:

  • 2 bone-in, skin-on chicken thighs

  • 1 tbsp olive oil (optional)

  • 1/2 tsp salt

  • 1/4 tsp freshly ground black pepper

  • 1/2 cup bone broth

For Serving (Optional):

  • Rice, quinoa, roasted vegetables

Instructions:

  1. Prep Chicken: Pat chicken thighs dry. Generously season both sides with salt and pepper.

  2. Sear Chicken: Heat olive oil in an oven-safe skillet over medium-high heat. Add chicken thighs, skin-side down. Cook untouched for 5-7 minutes for crispy skin.

  3. Flip and Cook: Flip thighs and cook an additional 5-7 minutes until golden brown and internal temperature reaches 165°F.

  4. Add Broth: Pour bone broth into the pan, scraping up browned bits. Simmer and occasionally baste chicken until sauce slightly thickens, about 2-3 minutes.

  5. Serve: Serve immediately, drizzled with bone broth sauce, alongside favorite sides.

Tips:

  • Avoid Splatter: Use a splatter guard when cooking the chicken.

  • Sauce Consistency: Adjust bone broth amount to preference. Simmer longer or add a cornstarch slurry (1 tbsp cornstarch + 2 tbsp water) for thicker sauce.

  • Flavor Boost: Add herbs like thyme, rosemary, or garlic powder to enhance the broth's flavor.
