Coconut Vanilla Protein Balls

Ingredients:

  • 1 cup shredded coconut

  • ½ cup almond butter

  • 1 scoop vanilla protein powder (about 30g)

  • 1 tsp vanilla extract

  • ¼ cup coconut flakes

  • Optional: Pinch of salt

Instructions:

  1. In a mixing bowl, combine shredded coconut, almond butter, protein powder, vanilla extract, coconut flakes, and salt if using.

  2. Stir until everything is fully combined and a sticky dough forms.

  3. Roll into 12 evenly sized balls.

  4. Chill in the fridge for at least 2 hours before serving.

Tips:

  • Use unsweetened shredded coconut to keep it lower in sugar.

  • Add 1–2 tablespoons of oats for a chewier bite.

  • For extra coconut flavor, add a drop or two of coconut extract.

  • Store in the fridge for up to 1 week or freeze for up to 1 month. Let thaw overnight in the fridge.
