Coconut Vanilla Protein Balls

Ingredients:
1 cup shredded coconut
½ cup almond butter
1 scoop vanilla protein powder (about 30g)
1 tsp vanilla extract
¼ cup coconut flakes
Optional: Pinch of salt
Instructions:
In a mixing bowl, combine shredded coconut, almond butter, protein powder, vanilla extract, coconut flakes, and salt if using.
Stir until everything is fully combined and a sticky dough forms.
Roll into 12 evenly sized balls.
Chill in the fridge for at least 2 hours before serving.
Tips:
Use unsweetened shredded coconut to keep it lower in sugar.
Add 1–2 tablespoons of oats for a chewier bite.
For extra coconut flavor, add a drop or two of coconut extract.
Store in the fridge for up to 1 week or freeze for up to 1 month. Let thaw overnight in the fridge.
