Ingredients

  • 1 green or yellow plantain

  • 1–2 tbsp bacon grease (or coconut oil)

  • Salt, to taste

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.

  2. Prep the plantain:
    – Cut off both ends of the plantain.
    – Make a shallow cut along the peel, then remove the peel with your fingers.
    – Slice into thin rounds or lengthwise strips depending on your preferred shape. Try to keep slices about ⅛ inch thick so they cook evenly.

  3. Add bacon grease to the pan:
    – Spread about 1 tablespoon of bacon grease on the baking sheet using a spoon or brush.

  4. Arrange the plantains:
    – Place the plantain slices in a single layer on the sheet — don’t overlap them.
    – Lightly brush or spoon more bacon grease on top of each slice.
    – Sprinkle with salt.

  5. Bake:
    – Place in the oven and bake for 12–15 minutes.
    – Watch closely near the end — you want them golden and crisp, not burnt.

  6. Cool and serve:
    – Let them cool on the baking sheet for a few minutes — they’ll crisp up more as they cool.
    – Enjoy right away or store in an airtight container once fully cooled.

Tips

  • Use green plantains for crispier chips and a more savory flavor. Yellow plantains are sweeter and soften more.

  • Keep the slices as even as possible for consistent crisping.

  • These are great on their own or dipped in salsa, guac, or used like crackers.
