Ingredients:

  • 1 pound (454g) strawberries

  • Juice of 2 lemons (~100g)

  • ⅓ cup (113g) honey

  • 1 teaspoon (5g) elderberry syrup (optional)

  • ¾ cup (180g) water (negligible calories)

  • 1.5 teaspoons (3g) agar agar

Instructions:

  1. Prepare the Strawberries: Wash, dry, and remove the tops of the strawberries.

  2. Blend the Mixture: In a food processor, blend strawberries, lemon juice, honey, elderberry syrup, and water until smooth.

  3. Measure & Add Agar Agar: Measure the blended mixture. For every 1 cup of liquid, use 1 teaspoon of agar agar.

  4. Heat & Simmer: Pour the mixture into a saucepan and stir in agar agar. Bring to a boil, then simmer for 2 minutes, stirring occasionally.

  5. Fill the Molds: Using a syringe or spoon, carefully pour the mixture into silicone molds.

  6. Set the Gummies: Let them set at room temperature for 30 minutes until firm.

Tips:

  • Storage: Keep in an airtight container in the refrigerator for up to 1 week.

  • Berry Swap: You can replace strawberries with raspberries, blueberries, or a mix!
