Homemade Gummies

Ingredients:
1 pound (454g) strawberries
Juice of 2 lemons (~100g)
⅓ cup (113g) honey
1 teaspoon (5g) elderberry syrup (optional)
¾ cup (180g) water (negligible calories)
1.5 teaspoons (3g) agar agar
Instructions:
Prepare the Strawberries: Wash, dry, and remove the tops of the strawberries.
Blend the Mixture: In a food processor, blend strawberries, lemon juice, honey, elderberry syrup, and water until smooth.
Measure & Add Agar Agar: Measure the blended mixture. For every 1 cup of liquid, use 1 teaspoon of agar agar.
Heat & Simmer: Pour the mixture into a saucepan and stir in agar agar. Bring to a boil, then simmer for 2 minutes, stirring occasionally.
Fill the Molds: Using a syringe or spoon, carefully pour the mixture into silicone molds.
Set the Gummies: Let them set at room temperature for 30 minutes until firm.
Tips:
Storage: Keep in an airtight container in the refrigerator for up to 1 week.
Berry Swap: You can replace strawberries with raspberries, blueberries, or a mix!
More Firmness: If you want chewier gummies, increase the agar agar slightly.
