Ingredients:
1 cup (140g) nuts of your choice (e.g., almonds, cashews)
1 tablespoon (14g) coconut oil, melted
1 tablespoon (21g) honey
½ teaspoon ground cinnamon
¼ teaspoon salt
¼ cup (30g) pumpkin seeds
Instructions:
Preheat the oven: Set to 325°F (175°C).
Mix ingredients: In a bowl, combine nuts, melted coconut oil, honey, and cinnamon. If using, add salt and pumpkin seeds. Stir well.
Spread evenly: Arrange the nut mixture in a single layer on a parchment-lined baking sheet.
Roast: Bake for 20-25 minutes, stirring halfway, until golden brown and fragrant.
Cool & crisp: Let cool on the baking sheet. The nuts will continue to crisp as they cool.
