Ingredients:

  • 1 cup (140g) nuts of your choice (e.g., almonds, cashews)

  • 1 tablespoon (14g) coconut oil, melted

  • 1 tablespoon (21g) honey

  • ½ teaspoon ground cinnamon

  • ¼ teaspoon salt

  • ¼ cup (30g) pumpkin seeds

Instructions:

  1. Preheat the oven: Set to 325°F (175°C).

  2. Mix ingredients: In a bowl, combine nuts, melted coconut oil, honey, and cinnamon. If using, add salt and pumpkin seeds. Stir well.

  3. Spread evenly: Arrange the nut mixture in a single layer on a parchment-lined baking sheet.

  4. Roast: Bake for 20-25 minutes, stirring halfway, until golden brown and fragrant.

  5. Cool & crisp: Let cool on the baking sheet. The nuts will continue to crisp as they cool.
