Chocolate Protein Pudding

Ingredients:

  • 4 eggs

  • ½ cup plain Greek yogurt (2% or full-fat)

  • 2 tablespoons honey (adjust to taste)

  • 2 tablespoons unsweetened cacao powder

  • 1 teaspoon vanilla extract

Instructions:

  1. Place eggs in a saucepan and cover with cold water.

  2. Bring to a boil over medium-high heat.

  3. Once boiling, turn off the heat, cover, and let sit for 10–12 minutes.

  4. Drain and place the eggs in a bowl of ice water for 5 minutes to cool.

  5. Peel the eggs and cut them in half.

  6. Add the boiled eggs to a blender or food processor.

  7. Add Greek yogurt, honey, cacao powder, and vanilla.

  8. Blend until completely smooth and creamy.

  9. Taste and adjust sweetness if needed.

  10. Transfer to jars or bowls and refrigerate for at least 30 minutes before serving.

Tips:

  • For extra smooth texture, use a high-speed blender.

  • Top with berries, coconut, nuts, or a drizzle of nut butter.

  • Keep leftovers in the fridge for up to 3 days.
