Taco-Stuffed Baked Sweet Potato

Ingredients:
2 medium sweet potatoes
½ lb ground beef (85% lean)
½ onion, diced
1–2 tsp taco seasoning
2 green onions, chopped (for garnish)
Olive oil (for cooking)
Salt & pepper
How to Bake the Sweet Potatoes:
Preheat oven to 400°F (200°C).
Wash and scrub sweet potatoes. Poke a few holes in each with a fork.
Place on a baking sheet and bake for 45–60 minutes, or until very soft when pierced.
Let cool slightly before slicing open.
Instructions:
While potatoes bake, heat olive oil in a skillet over medium heat.
Sauté diced onion for 2–3 minutes until softened.
Add ground beef and cook until browned. Stir in taco seasoning and a splash of water (1–2 tbsp).
Simmer for 2–3 minutes until well combined.
Slice open each sweet potato and fluff the inside with a fork.
Spoon taco beef mixture over each potato and top with green onions.
Tips:
Optional toppings: avocado, salsa, Greek yogurt, or shredded cheese.
Bake extra sweet potatoes and store in the fridge or freezer for quick meals.
Reheat leftovers in the microwave or oven.
