Taco-Stuffed Baked Sweet Potato

Ingredients:

  • 2 medium sweet potatoes

  • ½ lb ground beef (85% lean)

  • ½ onion, diced

  • 1–2 tsp taco seasoning

  • 2 green onions, chopped (for garnish)

  • Olive oil (for cooking)

  • Salt & pepper

How to Bake the Sweet Potatoes:

  1. Preheat oven to 400°F (200°C).

  2. Wash and scrub sweet potatoes. Poke a few holes in each with a fork.

  3. Place on a baking sheet and bake for 45–60 minutes, or until very soft when pierced.

  4. Let cool slightly before slicing open.

Instructions:

  1. While potatoes bake, heat olive oil in a skillet over medium heat.

  2. Sauté diced onion for 2–3 minutes until softened.

  3. Add ground beef and cook until browned. Stir in taco seasoning and a splash of water (1–2 tbsp).

  4. Simmer for 2–3 minutes until well combined.

  5. Slice open each sweet potato and fluff the inside with a fork.

  6. Spoon taco beef mixture over each potato and top with green onions.

Tips:

  • Optional toppings: avocado, salsa, Greek yogurt, or shredded cheese.

  • Bake extra sweet potatoes and store in the fridge or freezer for quick meals.

  • Reheat leftovers in the microwave or oven.
